Next weekend, the Winnipeg Wine Festival will highlight one of the most beloved red wine grapes: Cabernet Sauvignon. This exciting event is set to take place on September 25 and 26 at the RBC Convention Centre.

Cabernet Sauvignon, often simply called Cab Sauv, holds the title of the most widely planted wine grape in the world. It rose to fame in the 1800s in the Bordeaux region of France, where it continues to thrive today. In Bordeaux, red wines are typically blends rather than made from a single grape variety. Wines from the left bank of the Gironde estuary are usually Cabernet-dominant, while those from the right bank are led by Merlot, with Cabernet Sauvignon playing a supporting role. The pairing of Cabernet and Merlot has inspired wine producers around the globe to create their own blends using these two grapes.

A fascinating study by a team at the University of California Davis revealed the origins of Cabernet Sauvignon in 1996. They found that this popular grape is a cross between Cabernet Franc and Sauvignon Blanc. This hybrid likely occurred when the two grape varieties were planted close together in the same vineyard, leading to a natural mutation. Even before scientists confirmed this, wine growers had recognized the unique qualities of Cabernet Sauvignon long ago.

In terms of flavor, Cabernet Sauvignon wines are generally rich and powerful, offering deep, dark berry tastes along with hints of graphite and spices, balanced by a refreshing acidity. This grape also ages beautifully in barrels, with many wines spending time in wooden casks to enhance their flavors.

With such a vibrant focus on Cabernet Sauvignon, the Winnipeg Wine Festival promises to be an unforgettable experience for wine lovers.
